Practical Information

 The Session

Welcome

We invite you to our famous breakfast at 08.00 am !
Delicious pastries with fresh fruit juice and/or a hot drink will be waiting for you. This will allow us to wait for the few delays beyond our control.
Upon arrival at the Pastry School, you will be asked to sign in to confirm your attendance.
For participants in the long training programme, we will also provide you with your professional attire.

Course schedule

8.30 am, time for the pastry class to start. Set up in a room for 12 participants, we have prepared the equipment and raw materials for your session.
From Monday to Wednesday, the students work by theme.
You will have the opportunity to have a privileged relationship with a great professional of the trade. The chef will share his experience, know-how and techniques with you through theory, but above all through practice.
Each day, lunch is scheduled between 12.30 am and 1.45 pmThose registered in the «à la carte» training programme have lunch offered.

Departure

At the end of the course you will receive a certificate. You can take your creations home with you.

Evaluation methods

Continuous assessment; Personal commentary at the end of the course if desired.
Joint assessment on the last day.
At the end of the course, a Certificate of Attendance at the Olivier BAJARD International Pastry School will be issued to the trainees.
The pedagogy and methods used must enable the trainee to complete the entire programme.

Equipment & Materials

Professional clothing is mandatory

  • Jacket
  • Trousers
  • Apron
  • Professional «safety» or «non-slip» shoes.

For participants in the long training programme, a professional outfit consisting of 2 embroidered jackets, 2 trousers and 1 apron is offered. However, professional shoes are not provided by the school and are at your expense.

The school provides all the equipment and raw materials suitable for the session.

The school is not responsible for theft, loss or damage to this equipment and your personal belongings.

Wednesday from 8.30 am to 12.30 am and from 1.45 pm to 5.45 pm

The course timetable can be modified according to the nature of the training and the trainer’s organisation. Trainees are obliged to respect the trainer’s instructions and any modifications.

The trainees undertake to respect the timetable and the organisation of the school. In order not to disrupt the organisation of the course and out of respect for the trainer and the other participants, the school reserves the right to refuse access to the course to trainees who arrive late and/or who do not respect the internal rules.

Foreseeable absences must be notified in advance in writing or with a receipt.
Non-predictable absences (accident, illness, etc.) must be communicated as soon as possible by e-mail or telephone to the school secretary.

The school reserves the right to postpone the date of a course if the number of registered participants is less than 5. In case of cancellation by the school of one of the courses, except in cases of force majeure, third party or fortuitous event, it will try, as far as possible, to postpone the date of the course.
