After a promising start in the kitchen, he became a pastry chef and chocolate maker when he joined Olivier Bajard in 2009.

Today, as production manager, Rémy manages the team, passes on his know-how and imagines new recipes alongside Olivier Bajard. Each time, it is a question of challenging oneself, of going back to the basics of the trade to manage and organise a team and make a difference.
