Patrice IBARBOURE has been swimming in restoration since childhood. At the end of his schooling it was therefore obvious for him to follow in the footsteps of his parents and grandparents… Passionate about pastry, after studying at the hotel high school in Biarritz he decides at 20 to go and conquer Paris.

Five years in the heart of the capital: two years with Fauchon in store, a year and a half with the great leader Pierre Gagnaire. A year at the Palace du Crillon with Jérôme Chaucesse. In late 2011, he flew across the Atlantic to New York to join another great star chef, Daniel Boulud.

After his rich experiences and full of desserts he decides to join the family nucleus and his brother Xabi Ibarboure in April 2013.
